Dear Deanne,
I hope you can understand my translation of the Muqueca recipe. Any doubt, please call me.
Muqueca (can be with shrimp or fish)
. 1 package of shrimps (cooked or raw)
. 1 can of coconut milk
. parsley, cilantro and green onion
. onion
. 2 cloves of garlic
. 2 tomatoes or more
. 3 green peppers (green, red & yellow)
. 2 limes
. olive oil
. tabasco
. salt & black pepper
How to prepare:
. marinate the shrimp (or fish) with limes, salt & pepper and put aside
. squeeze the garlic
. chop the greens separately
. cut the onion & bell peppers in very thin slices
. put 2 tbs of olive oil in a large pan on fire and saute the onion with the garlic until lightly brown
. add tomato, bell pepper and after a while put some water so it wont stick to the bottom of the pan
. add a little more olive oil and let it cook covering the pan until the vegetables are tender (not too long)
. add the parsley and let it cook a little bit more
. leave the cilantro to the end
. add the coconut milk, salt, black pepper and drops of tabasco at taste and brings all to a boil
. when it is ready spread the cilantro over it
. serve with white rice or couscous
